Garlic Inspired Diced Potatoes

 Garlic inspired potatoes vegan


Diced & Peeled Potatoes (soaked for an hour in water)

Fresh Tomatoes


Button Mushrooms

Garlic Salt

Olive Oil

AC Spice


Dice and peel potatoes and let them sit in some water for about 30 minutes to 1 hour to remove starch.


Drain water and pat potatoes dry. Add oil and garlic salt and distribute evenly by tossing potatoes in oil seasoning mixture. Set Aside


Wash all veggies and dice all vegetables except tomatoes to your liking.


Grab skillet and seasoning your oil with AC Spice and let is simmer on low heat for 1-2 minutes.


Add in onions and sauté for 1-2 minutes. Next, add in mushrooms and sauté for 3-5 minutes. If there is too much water you can cook the onions and mushrooms on low heat until the water reduces and the pan is almost dry. Remove from heat.


Now heat the oven to 425 degrees F while your vegetables are cooking and potatoes are relaxing.


Grab a large sheet pan and oil it a bit. Add diced potatoes and place tomatoes as you desire on the pan with the potatoes.


Now pop the sheet pan in the oven for 35 minutes and flipping potatoes halfway to encourage even cooking throughout.


Once done remove from heat and add sautéed onions and mushrooms on top of potatoes and serve!


Tip: Dry mushrooms as much as possible. Mine were too wet and I had to let the water reduce in the pan.


Tip: Add a sweetener such as honey or agave to give your onions a little sweetness!
